This was good, believe it or not. I intended to make something else to use up our leftover chicken, but we didn't have the ingredients, so I just ravaged the cupboards and came up with a surprisingly good soup:
Leftover chicken, shredded
One can of cheddar cheese soup
One can of cream of chicken soup
Two soup cans of water
Salsa, pureed so the kids don't have to eat "chunks"
After the above were all whisked together and hot, I added about four fajita-size tortillas, cut into short strips, to the pot. That's it. Probably quite high in sodium, but it was good anyway! We ate it with fresh-baked cornbread.
